Signature Seafood recipe book for the Yorkshire Wildlife Trust.

A collection of recipes using seafood sustainably caught off the Yorkshire Coast

I was commissioned to create 12 easy seafood recipes. Yorkshire produces some fantastic seafood which is in high demand and exported throughout the world. This project was designed to showcase the best of our fisheries and highlight regional restaurants and outlets championing locally caught seafood.

Seafish Ambassadors Recipe Book

This was a great fun project. Once again simple seafood dishes with stunning photographs by Steve Lee Studios, London. The recipe book aims to showcase a range of seafood options, with simple tasty and modern dishes that anyone can create at home. From traditional family favourites to modern classics

Taste of Game website recipes

I was asked by Taste of Game to provide 6 new modern dishes for their website and for promotional purposes. Dishes included venison, mallard, pheasant, pigeon and some rather tasty gourmet game sausage rolls

Seagrown - Seaweed seasonings

Commissioned by Wave Crooks of Seagrown, I was asked to develop 12 seaweed seasonings. Using dried sea greens, nori, kelp & dulse. Each seasoning had its own distinct flavour enhancing the natural flavours of the seaweed. The products will be available soon on their online shop.
